Criteria for Internship Exemption –F&B DEPARTMENT

You are required to provide evidence of at least six months relevant work in a hotel or restaurant, and also complete the following tasks:
1. Describe the establishment where you worked, giving the dates, this should include the ownership, the location, the size, the level or style of service.
2. Describe your duties while employed.
3. What procedures were there in your establishment? How were they controlled and checked? How often? Who was responsible?
4. How would you describe the customer focus in your establishment? Who were the key target customers?
5. Describe the dining room / restaurant design. (Include drawings, sketches, plans or photos.). Comment on the style of dining, the menus offered, the scope or potential for creativity.
6. Describe and comment on the systems for food production and portion control including aspects of wastage and use of convenience foods.
7. Describe and comment on what measures the establishment which showed awareness of potential damage to the environment – comment on use of energy; cleaning products; paper, packaging and all kinds of containers including glass.

 
Combine all elements completed in previous weeks (Topics 1-4) into one cohesive evidence-based proposal and share the proposal with a leader in your organization. (Appropriate individuals include unit managers, department directors, clinical supervisors, charge nurses, and clinical educators.)

A scholarly paper is required in which you will identify, describe, research, and apply the concepts that underlie your personal philosophy for professional nursing practice. The purpose of this assignment is to provide an opportunity to identify your own values and beliefs about the established metaparadigms of the discipline. You must identify and articulate concepts relevant to your specific practice. This assignment is intended to be an exercise in clarification and organization of your professional foundation. The paper should follow a format that includes:
• A personal history/biography of the student’s experience in nursing from his/her decision to become a nurse to his/her current professional role
• Identification, discussion, and documentation from the literature of your perspective on the basic four metaparadigms (concepts of patient, n health, environment and nursing)
Consider the following questions to guide your paper
1. How do I define and employ the four basic metaparadigms of nursing theory in my professional practice?
2. What are the other major concepts I employ that are unique to my professional practice?
3. What are the assumptions about nursing that underlie my philosophy/framework?
4. What philosophies and theories from the literature of nursing are consistent with these concepts and assumptions?
5. What research supports these theories and concepts?

The paper is to be thoroughly researched and well documented, with relevant material from the literature. The paper, excluding references should to be limited to 8-10 pages. Writing should be succinct and well organized and presented.
Grading of the paper will be based on the following:
Discussion and history of student’s experience in nursing 15 points
Reflections on how your experiences have molded your own philosophy and
changes that have occurred since you began your career 20 points

Personal Philosophy identifying, discussing and documenting from
the literature each of the four basic concepts in the metaparadigm.Clarity, organization and articulation of ideas 15 points
